What a treat to find your web site. I was raised in Detroit & went to St Theresa on the west side. My grand parents migrated from Italy to New Orleans in the 1920's.My godfather is Rene Galatorrie & I spent a lot of time as a youth with him in Southern Lousiana learning the creole/cajun culture along with food preperation. My wife & I have a catering business in Southern Utah that features creole/cajun italian & southern specialties. Thanks for sharing your good stuff with us
Ciao

I tried this recipe, except I used canola oil. It turned out wonderful. I've been looking for a good fried chicken recipe for a long time, and this is the first one that comes out crispy on the outside and juicy and not overcooked on the inside. Sorry I never got to go to New Orleans and have Mr. Leslie's cooking. He seemed like a very nice man as well as a great chef.
